what's the best cheese for quesadilla's???..... should one use jalapenos or habaneros??? .... fried, broiled, or boiled chicken???

My approach was to fry the tortilla in butter and melt some jack cheese in it. I would use alot of butter to fry it, adding more as needed until the tortilla was a nice crisp golden missile brown.

When the cheese was oozing out, it was done!

anyone else who grew up in the 60's/70's would know my pain. we took a lot of little things without knowing the future consequences.

it was something like this...."here, take this small blue dot and wait an hour. your going to feel real good!"
