Default Bias

I'm a novice player.....reading Davidowitz' Betting Thoroughbreds. Some great information on pace and bias. This may be a stupid question but how do you know how many turns in a route race at a particular track. I guess the obvious answer is watch the track but I guess I'm asking if the number of turns is always consistent for a specific distance at a specific track. I may be familiar w my local track but when reviewing pps, I would not know the layout for a different track. Does this make sense or am I off " track"?
