You can purchase the Lexington Herald-Leader Sunday paper post-Derby off their website, I believe. Best coverage IMO.
The other major papers just don't do it anymore (I too have a bunch of old Chicago Tribunes, with the sports front-page picture of the entire Derby field, their names in little boxes showing their finish order
